I am covering all bases with respect to the upcoming Handmade Expo in Ipswich next Saturday (16th August) - Kerri (my good friend that helps me at my shop & partner in crafty crime) & I have decided to do some baking as well. As we all know the food stalls at any markets are always the most popular - so to help pay for the stand costs we are whipping up some treats.
We are taste testing this weekend and I have just finished my Choc Chip Slice -
This is an easy recipe for those time impared like me
Preheat oven to 180 celcius
Line Lamington tin with baking paper
Crumbe 4 wheat biscuits (weet-bix) into a large bowl and 1 cup of self raising flour, 3/4 cup of brown sugar, 3/4 cup of desiccated coconut and I cup of dark chocolate buds. Stir to combine. Melt 150g of butter and add to the dry mix. Combine and press into the prepared tin. Bake for 20-25min. Stand on rack to cool when cool top with melting chocolate and leave for about an hour or until chocolate is firm. Cut into square and serve.
